We firmly believe the best cacao comes from the Caribbean and Latin America. We source from our own Costa Rican Small Food Producer collectives of over 175 Producers and increasing, and alongside a top university that protects cacao and develops 100% organic disease-resistant cacao varieties. For harvesting, cacao pods are carefully cut down by hand using large knives on long poles. These pods are collected in baskets, split open, extracted by hand, and placed in wooden boxes for 6-8 days where they’re turned occasionally for even fermentation, followed by another week of sun-drying. All of our beans are single origin, meaning we do not blend varieties which is a way to add in lower quality, less flavorful beans.
