We firmly believe the best cacao comes from the Dominican Republic and Costa Rica. In the Dominican Republic they grow the much-coveted Hispaniola bean. Its flavor profile is unique among traditional cacao beans. Representing a very small part of the nation’s crop, it’s grown only in the valley around San Francisco de Macoris and on the hills near Hato Mayor. Harvesting is done by hand and is labor-intensive. Cacao pods are carefully cut down using large knives on long poles. These pods are collected in baskets, split open, extracted by hand, and placed in wooden boxes for 6-8 days where they’re turned occasionally for even fermentation, followed by another week of sun-drying. The Hispaniola cacao bean takes significantly more labor than other beans, which you will no doubt appreciate.
